Lanta Thai Cookery School teaches in a teak-wood house just inland from the south end of Phra Ae (Long Beach) on Koh Lanta. Many of the herbs and vegetables come from its own organic garden. Two classes run each day, midday and evening, and each lasts four hours.

Your group chooses four dishes together from a menu that changes from class to class: salads, soups, stir-fries, noodles and curries built on pastes you pound by hand. The chef opens with a welcome drink and a walk through the ingredients, then you cook and eat what you made at the end. Leftovers go home with you. Every dish can be made vegetarian, vegan, mild or hot if you say so when booking. Children cook two dishes instead of four.

A songthaew (shared pickup truck) collects you from hotels on the main road between Saladan and Kantiang Bay. For the midday class, pickups run from 09:20 at Kantiang to 09:45 at Long Beach; for the evening class, 15:20 to 15:45. The school emails your exact time after booking. Classes take up to 12 people, and you leave with a cookbook and a certificate.

Insider Tip: The evening class suits the southern beaches. You start after the worst of the afternoon heat and get back in time for a late drink.

Watch out: Pickup only covers the west-coast road. Staying in Lanta Old Town or on the east side? Ask the school before booking, or plan a taxi.

This is a well-organised class in a pleasant garden setting, not a farm day. If you’d rather spend a day on the water, the Koh Rok and Koh Haa snorkel trip is the island’s other big outing.
