The full-day version of Smile Organic Farm’s cooking school runs around eight hours and lets you cook more dishes at a slower pace than the half-day class, out at the farm 45 minutes east of Chiang Mai’s old city, close to San Kamphaeng Hot Springs. The garden is the heart of the place: you pick basil, lemongrass, galangal and chillies from the beds before cooking, which is as close to farm-to-pan as any Chiang Mai class offers.

The day starts with pickup in an air-conditioned vehicle and a stop at a local market on the way out, where the teacher walks you through Thai pantry staples and you see the countryside rhythm of a real working market rather than a demo. At the farm you swap the market chaos for shaded outdoor stations, taste herbs straight from the soil and work through a longer menu than the half-day version allows: more courses, more technique (including curry-paste pounding), and more time between dishes to actually talk about what you’re doing. You eat what you make as you go. All dishes have vegetarian and vegan versions.

Groups cap at four, which is why the reviews stay consistently 5-star. Wear something you don’t mind getting a little splashed, bring sun cover for the market walk, and don’t eat a big breakfast; you’ll be eating continuously once you start cooking. You leave with a recipe e-book by email and a Facebook photo album of your class.

Eight hours is a long day and the transfer time each way means you’re out of the city for most of it, which is the whole point. If you’re debating between this and the half-day version, take the full day if you want to learn proper curry paste technique and a wider menu; take the half-day if you have other things planned. Morning starts are cooler for both the market and the outdoor kitchen.
