The day starts with pickup in an air-conditioned vehicle and a stop at a local market on the way out, where the teacher walks you through Thai pantry staples and you see the countryside rhythm of a real working market rather than a demo. At the farm you swap the market chaos for shaded outdoor stations, taste herbs straight from the soil and work through a longer menu than the half-day version allows: more courses, more technique (including curry-paste pounding), and more time between dishes to actually talk about what you’re doing. You eat what you make as you go. All dishes have vegetarian and vegan versions.
