Most Chiang Mai cooking classes teach the same Bangkok-pitched canon: pad thai, green curry, tom yum. This one is run by a native Akha chef and leans into hill-tribe food alongside the standards, so alongside your curry paste you might learn a grilled aubergine dip or a bamboo-shoot dish that never makes it onto hotel menus. You also drink Akha Hill Tribe coffee, which the family grows in the mountains north of Chiang Rai.
Morning classes start with a guided walk through a fresh Chiang Mai market at 9am, where the chef talks you through Thai and Akha ingredients side by side: which chillies are for heat, which for fragrance, why fresh turmeric is different from dried. Back at the cooking school you get your own station with a wok, gas burner and prep board, then work through the day’s menu hands-on with your teacher correcting technique. Between dishes there’s time for a rest, the coffee, and a flip through the full-colour cookbook you take home. The evening class skips the market and meets at the school at 5pm instead.
The class runs around six hours for the morning version, closer to four if you do the evening. Groups cap at eight, and hotel pickup and drop-off within 3km of the city is included. Come hungry, wear sleeves and trousers if you don’t want oil spatter on bare skin, and tell them in advance about allergies.
Alcohol isn’t included but you can buy a Chang or Singha on the side, which is worth it for the final tasting. It’s rare to find a class where the teacher actually grew up eating this food, and the cultural context the chef brings is what sets this apart from the assembly-line schools.
