This is the only one of Tingly Thai Cooking School’s three classes that starts outside the kitchen. Meet at the school on Soi Phrachom, off Surawong Road in Bangrak, at 8.30am; five minutes later the group walks over to Wat Kheak fresh market, where the instructor talks through the fruit, herbs, vegetables and spices that go into the cooking ahead. By 9am you’re back at the stoves. Groups go up to 12.

Cooking runs from 9am to noon: tom yum goong, pad thai with prawns, a curry that changes with the day (green on Monday and Friday, red on Tuesday and Saturday, panaeng on Wednesday and Sunday, mussaman on Thursday), and mango with sticky rice to finish. A recipe book goes home with you, alongside all the equipment and an English-speaking instructor talking through technique rather than just demonstrating it.

Insider Tip: the market stop is the one thing you can’t get from the school’s other two classes, worth booking this session over the afternoon or evening one if seeing where the ingredients come from matters to you.

Watch out: transportation to and from the school isn’t included, and this is a shared class, not private. Expect up to 11 other people at the stoves.
